Thai Style Mango Salad

First recipe of 2017! Happy New Year everybody. There is more and more of you reading my blog for the past 2-3 months based on the stats I see so thank you. I am going to try to be a little more active at posting recipes on here instead of just on my Ig page. Let me know what recipes you like most and any feedback is appreciated. I love hearing back from you guys. 

Anyway I posted this mango salad on my Instagram page asking if anyone would like the recipe and I got lots and lots of comments asking for it so here it is. Perfect salad for summer here in Australia (bookmark it for next summer if you live in Europe/North America!).

Thai Style Mango Salad:

Serves 4 as a side. 
  • 1-2 mango diced;
  • 1 bunch of mint;
  • 2 cups of mixed leaves salad or leave it out and add more mint. 
  • 2 finely cut or grated carrot;
  • 1 cup of red cabbage finely sliced;
  • 1/3 of red capsicum thinly sliced;
  • 1-2 tbsp of salted peanuts or cashews;
  • Optional: fried shallots, fresh chilies, coriander;
  • Dressing: 2-3 tbsp of sesame oil and 1 lime juice. You can also add soy sauce. 

  1. Prepare and slice all your vegetables and mango;
  2. Mix it all together;
  3. Dress the salad with sesame oil and juice from 1 lime;
  4. Add fresh chilies and peanuts and serve.
